A friend of my husband introduced this recipe to us. And while my husband has only tried it once, I make these quite often for breakfast, even making them to take to work for lunch.
Add all ingredients to a bowl or cup
Mix with a stick mix or with a fork until its all combined. If you use a fork make sure its very well combined.
Pour pancake mixture into pan & turn down to low heat. Flip when the edges turn matte & bubbles stop forming in the middle.
They don’t take long to cook so keep an eye on them. You can’t really spread anything on them because they tear easily but go great with fruit, greek yoghurt & a bit of honey.

- 2 eggs
- 1 banana (peeled)
- 1/4 cup oats
Instructions
- Combine all ingredients in a bowl with a fork or in a blender
- Heat a frying pan on high with some butter or another greasing agent
- Pour pancake mixture into frying pan and turn down to low heat
- Flip when the edges turn matte and bubbles stop forming in the middle.
