2014 Resolution Update

Here is an update of the original list that was my first ever blog post. You can find the original post here or follow the life category. I think I’m safe to say I’m on track with about half of them.

I think a lot of this also comes down to how you feel within yourself. If you feel inferior about some part of your life or body of course it will get you down when someone else brings it up.
Be confident in yourself & let the negativity be like water off a duck’s back.

There is no other way to get there than to do it. Do it right. And do it for yourself. There isn’t much point in wishing, hoping & waiting. You have to go out there & create the life you want.

I see beauty in confidence. When as person is confident, I believe they are beautiful. You could be having a horrid day & feeling worthless, but in showing a bit of confidence you radiate magnificence.

Protein Pancakes

A friend of my husband introduced this recipe to us. And while my husband has only tried it once, I make these quite often for breakfast, even making them to take to work for lunch.

Pinterest Clean Up

While you haven’t seen my personal my Pinterest boards, I have a few pins there (1,068 to be exact at the moment). I think it’s time for me to clean some of them out & update them again according to what I like & what I will actually use/draw inspiration from.

The Plan:

  • create some new boards to make things a little more specific & easier to find
  • delete irrelevant pins
  • check all the links go to the correct source

Mexican Coffee Pudding with Kahlúa Whipped Cream

A while back, I had some cream in the fridge but didn’t seem to have a use for it. So I did some googling & came upon this recipe. Lucky for me, I had everything it required.

1/2     cup packed brown sugar
3       tablespoons cornstarch
3       tablespoons coffee powder
1/2    teaspoon cinnamon (plus additional for sprinkling)
2       cups milk
1 1/4 cups chilled heavy cream, divided
1       tablespoon Kahlúa or other coffee-flavored liqueur

  1. Whisk first 3 ingredients and 1/2 teaspoon cinnamon in heavy medium saucepan.
  2. Whisk in milk and 1 cup cream. 
  3. Bring to boil over medium-high heat, whisking constantly.
  4. Divide among 6 small bowls. Cover and chill until cold, about 4 hours.
  5. Whisk 1/4 cup cream and Kahlúa in small bowl until peaks form. 
  6. Spoon atop puddings & sprinkle with cinnamon.

I’m sure nothing would get done if people gave up after the first try. Some people wouldn’t have children. Some people wouldn’t finish high school or university. Some people wouldn’t make it to the top of their field. Some people wouldn’t do the right thing. And sadly, some people might not live to see another day.

I have finally jumped on the Divergent bandwagon. I actually don’t think I’m that late either. Although, the best thing about being late to jump on the bandwagon is the remainder of the series has been publish & I don’t have to wait to find out what’s next (besides waiting for it to be available at the library).

I picked this up from the library on Wednesday night, after waiting for a few months. (I currently have 3 books on hold at the library & another 6 checked out)
I only get a chance to read when I take my lunch break lately as my other time outside work is devoted to crochet & household duties at the moment. But of course, that may change if I am unable to put this book down!

I am only up to chapter 3 but like it enough to want to know what happens next. It’s always hard starting a new book; learning the characters, the setting, new words.
